A Picnic with quiche

~ Our Weekly Menu ~

Monday: Ravioli & Spinach soup served with garlic bread
Tuesday: Spaghetti with marinara sauce, and a spinach salad with homemade raspberry vinaigrette 
Wednesday: Spinach & Gouda Quiche (perfect for a picnic)
Thursday: Breakfast for dinner : French Toast & fruit


This was a shorter  menu week for us, because we spent some of the weekend in Atlanta for the baby shower for Neal & Deborah (my brother & sister-in-law). Photos tomorrow!

Recipes


Caroline's Quiche 

9 eggs
1 1/2 cups of heavy whipping cream
3/4 cup frozen spinach
1 wedge or block of smoked gouda or gruyere cheese shredded or sliced
2 pie crusts (depending on how much time I have, I either make them homemade or use a frozen one)
salt & pepper to taste

Pre-heat oven to 400 degrees. Beat eggs & heavy whipping cream together. Add salt & pepper if desired. Pour a small amount of egg mixture into each pie crust, just enough to coat the bottom. Scatter the frozen spinach (make sure it's broken into small pieces) into the pie crusts evenly. Layer the cheese on top. Then, pour the remainder of the egg mixture into each pie crust, making sure that all of the filling is covered. Bake at 40 until golden and solid all the way through - approximately 40 minutes. Makes two quiche. (They are wonderful leftover or frozen!)

Other filling ideas:
Bacon & gouda
Potato, onion, and gruyere (potatoes & onion must be sautéed briefly beforehand.)

This is a staple around our house, and I often make 2 or 3 at a time so that we can eat the leftovers for lunch! I also made this recipe for the baby shower this weekend!


Caroline's Homemade Raspberry Vinaigrette

8 oz. frozen raspberries - thawed in refrigerator overnight
1/2 c. apple cider vinegar
1/3 c. agave nectar

Blend drained raspberries until smooth in a blender or food chopper. Scoop into a bowl and add vinegar and nectar. Stir until blended and serve!

Simple and absolutely delicious! Honey might could be substituted for nectar, although I have not tried it!

I just realized (through your very very old posts) that you were/are a dancer. This was awesome news as I am also a dancer, haha. You are so artistic in so many ways, I love it!

Hi there! Thanks for stopping by my blog. I think you could very easily take out the chicken in the Moroccan soup- the flavors are really different and delicious. ;)

In all curiosity, I'd love to know what you consider a feminist to be. It's a topic that has come up a bit here (mostly among the fellow PhD wives here in Scotland) as many of our husbands are studying theology and my own is studying the Trinity and the implications on gender, etc. :)
