Somewhere Over the Rainbow....

There is a rainbow cake...


In the months of February and March, we celebrate 5 birthdays (soon-to-be 6!) in David's family. Every year, we celebrate with a combined birthday extravaganza. This year, I had a lot of fun baking the cake: a six-layered rainbow cake to represent each of the six individuals that have February/March birthdays!

The cake started out simply enough: two boxes of white cake mix!

 I separated the batter into six bowls and colored it! That was definitely the fun part. This would be a very fun project for teaching kids about mixing colors!

I baked each layer in a 9" pan; let it cool, and then wrapped it in plastic wrap and placed it in the freezer. This made icing the cake so much easier!

I may or may not have eaten a piece for breakfast this morning....Happy Monday!

Those colours came out really bright. What brand of colouring do you use?

I once made a rainbow cake with each colour a different flavour! (red - strawberry, yellow- banana, etc) It was amazing :)

Oh wow, this cake is incredible!! I would have never thought to do that. What a great surprise when you slice into a seemingly normal white cake! I've never tried making a layered cake, but they look so pretty. Great job!
