Lemony Chickpea Stir Fry

Monday: Lemony Chickpea Stir Fry (click for recipe) Absolutely delicious, unique, and surprisingly filling!
Tuesday: Veggie Subs on a whole wheat loaf
Wednesday: Puerto Rican-style rice & beans
Thursday: Homemade pesto sauce & penne
Friday: "Meaty" Meatless chili
Saturday: The plan was for Vegetable Pot Pie, but instead, we made Chicken-less dumplings (much faster, but still delicious comfort food!)
Sunday: Homemade Potato Soup

This week was a success! We only ate out once for lunch, and our grocery bill was lower than usual. Happy stomachs, and happy bank accounts.

How do you make your potato soup? It's on our list this week too (gotta love fall) but I'm not sure I'm happy with my current recipe.

Oh girl! Sounds delicious! Do you have a lot of leftovers? I make 4 meals for me and Sean every week and we eat leftovers on three of those days. Maybe I am making bigger meals than you? I was just wondering! Your dinners sound amazing!!!

I love the lemony chickpeas, and pretty much any recipe on that site. You have great meal ideas and I'm sometimes in need of good vegetarian inspiration :)
