Berry Pickers.

Our unseasonably warm spring has led to the early arrival of strawberries, and as a fresh-fruit-starved local-ish eater, there has been some major excitement in our house over their ripening.

Easter breakfast led me to re-create this tradition from David's childhood:
 strawberry dumplings.

(A concise recipe is at the bottom of the post).
 I made my favorite biscuit recipe, rolled it out, and cut them into triangles.

I make a few changes to the yogurt biscuits:
- I use 1/2 fresh ground whole wheat flour
-I quadruple the recipe.


I tossed a cup of strawberries with 1/4 c. of sugar, and placed a strawberry in each triangle.

Fold it up and close the seams by pinching your fingers.

While you are forming the dumplings, melt a stick of butter in the pan you will bake them in, and then arrange the dumplings tightly together.

Bake at 375 for about 15-18 minutes, or until golden brown.

We like to serve it with fresh strawberry syrup & a sprinkle of powdered sugar.

Strawberry dumplings are delicious for special occasions, but my littles are perfectly happy to eat strawberries straight out of the fields, where we have been picking - some for now, and some to freeze for later.

Strawberry Dumplings

Ingredients:

1 c. fresh strawberries (cut into halves and de-stemmed)
1/4 c. sugar
1 stick of butter
Pre-made biscuit dough: I quadruple this recipe. (I use 1/2 whole wheat flour).



Pre-heat oven to 375. Place your pan in the oven with the stick of butter. Toss strawberries with sugar. Roll out the biscuit dough into a large rectangle and cut into triangles with a knife, similar to the shape of a crescent roll. Place a strawberry in each triangle and fold it up and seal the seams by pinching them together. After the butter has melted, put dumplings into pan and bake for 15-18 minutes, or until golden brown. Serve with fresh fruit, or a strawberry syrup.

Yield: Approximately 18 dumplings.

yum! can't wait to try this. We now have local-ish strawberries (from California but when you have been subsiding on apples and pears for 7 months, that is local enough for now!)

Those look good. Berry picking with kids is possibly my favorite thing about the summer.
